Chorizo and Lentil Stew
Fabulous! I soaked the lentils in water for 24 hrs and then used 3 cups of lentils. Small changes: Added 2x the amt of the 3 seasonings, and some extra garlic. I used chorizo that I had already grilled, and then cut in half circles. I made sure I used the celery leaves too, for some added flavor, and a 1/4 cup of parsley. I blended the soup with an immersion blender to make it thicker. Delicious!

Zucchini Brownies
You "almost" can't tell there's zucchini in these! EVERYONE asked me for the recipe! The chocolate taste was perfect- not too sweet. And the icing was phenomenal! One suggestion- the liquid in the zucchini is a must, so don't process a whole bunch of zucchini and use the desired amount of just the "meat" of the vegetable. The liquid to "meat" ratio must be kept.

Southwestern Chicken Salad
I wanted something lighter, and this recipe wasn't that. Taste was good, but the cheese and ranch dressing was a lot for my taste.
