Eggplant Parmesan II
WOW! Sooooo delicious! If you like Lasanga (did I spell that right?) then you will love this dish! I used 2 eggplants instead of 3. I mixed a large can of spagetti sauce with a small can of chopped tomatoes and added to heaping teaspons of fresh minced garlic to it. This dish came out simply amazing. I will make this over and over again!!
