I am a single male who enjoys cooking main dishes and baking pies,cakes and cookies for myself and others. I have short order cook training that I took in College and some practical experience at home and restaurants. I have a cat named Christopher who lives with me in my trailer in Slocan,B.C.

My favorite things to cook are Macaroni and cheese, Pumpkin Pie, Lemon Meringue Pie, Spaghetti with tomato sauce, cheese omelet, and carrot cake
My favorite family cooking traditions
In my family we cooked mainly english meals which I did enjoy while growing up at home. We always had roast beef and potatoes on Sunday and Fish and Chips during the week. We always had eggs and bacon on Saturday morning and Pancakes on Sunday morning.
My cooking triumphs
I have made several pies consisting of pumpkin, lemon meringue and bacon quiches that have always turned out fantastic for me and I get good reviews
My cooking tragedies
My one pie that I made in Highchool did not make it home instead it ended up on our driveway when I dropped it accidentally while getting out of my friends car which I really felt bad about since I could not eat it.

Pumpkin Bread V
All of my quickbread recipes that I have made in the past always stuck to the pan and came out all wrong using all the right instructions. I have made this pumpkin bread recipe twice now and it has come out perfectly every time. Instead of Baking Powder I use one teaspoon of potato starch and one teaspoon baking soda as a replacement. It still makes a wonderful moist loaf for me to enjoy.

Excellent Oatmeal Cookies
I am always searching for the ultimate cookie recipe that makes a good snack for me. After going through all the reviews of this oatmeal recipe I went to work to create my best cookie ever. Instead of 1 cup of butter I used just 1/2 cup and used pure cane sugar instead of brown sugar with just 3/4 of a cup. I added 2 cups of unbleached flour with 3/4 tsp of baking soda and small amounts of nutmeg and cinnamon. They were easy to mold and came out very shapely with a good chewy texture. I did not add walnuts but I added 1/2 cup of craisins to the recipe which came out very well for the first time making these cookies. I hope to make these oatmeal cookies again.

Carrot Cake Cookies
I have tried different cookie recipes with varying results. The resulting cookie batter seemed that it would not make a proper cookie but much to my surprise they came out wonderful with a pleasant chewy texture of pineapple and walnuts which I really like. I put ginger in also to give it a nice flavor which also saves on my cinnamon. I will make these cookies again.
