About this Cook
I am a wife, mother and now a grandmother. I have lived on my husbands' family farm for over 40 years and love the country way of life, though I do love to visit big cities and traveling. I am a southern cook and feel most comfortable in the kitchen.

Make ahead dishes for the freezer, baking, slow cooking, desserts, salads and it's fun trying gourmet recipes from time to time.
My favorite family cooking traditions
Every New Year starting the year off with luck by fixing the southern tradition of blackeyed peas, ham (or hog gowls), collard (or mustard) greens and cornbread. Also look forward to the traditional Thanksgiving turkey with all the trimmings and Christmas dinner with family and/or friends.

Sweet Sweet Potato Casserole
I rated this 5 star because I'm sure it would taste great as written. It gave me a great starting point. Here are some changes I made to make it healthier for us: 1/4 C. of Maple Syrup in place of brown sugar; just enough f/f milk to make it the right consistency; used coconut flour instead of all-purpose; coconut oil in place of butter; and added cinnamon and vanilla (or grand marnier) to taste. For the topping: I added coconut oil to the pecans and unsweetened coconut and spread this on top. I was even surprised myself of how delicious this turned out. This recipe gave me something to work with...thanks so much for submitting this!

Chicken with Lemon-Caper Sauce
Even though it was too tart for our taste, I went ahead and rated it 5 stars because it is basically a great recipe. Next time though I will start out with half the amount of lemon juice and make up the difference with either water or chicken broth and then add more lemon juice if needed.

Cream of Fresh Asparagus Soup II
Definitely "5-Star"! I made this according to recipe using organice free range chicken broth, sea salt and fat free milk. Topped it with a dollop of sour cream, sprinkling of 6-Cheese blend, asparagus tips and freshly ground pepper. Served it with blue corn tortilla chips. Looking forward to leftovers!
