Baked Egg Rolls
OK, so I changed a lot of the filling ingredients since I'm a vegetarian and wanted to keep it simple. I used 1 cup chopped baby bellas, 1 cup chopped scallions, and 2 cups broccoli slaw (so easy!). This produced 6 egg rolls, but I scaled the ingredients down to 4 servings. Maybe because of my changes the sauce seemed a bit bland. I think next time I will make a sauce to go with them. That being said, they were deliciously crunchy and absolutely satisfying as egg rolls. Will definitely try again with more tweaks!

Pumpkin Risotto
This was a tasty generic risotto. This subtlety of the pumpkin was overpowered by the other components of the dish. I tried to bring out the pumpkin by skipping the bouillon, but the flavor was still lost amongst the onions, garlic, and parmesan. Still tasty though!

Award Winning Soft Chocolate Chip Cookies
I followed some review suggestions and added extra baking powder and tripled the suggested vanilla extract. These cookies were so good I couldn't give them away! I ate just about the whole batch myself. Thank goodness I halved it! Oh, and this makes awesomely big cookies!
