When my husband and I started dating, I warned him that I was culinarily challenged.  He said that was fine.  He liked cooking.  I could clean up.  I looked forward to him picking me up and driving me to his place where he had prepared simple, but simply delicious dinners,… MORE

About this Cook
I still haven't figured out what I want to be when I grow up!
My favorite things to cook
Still in progress, but the list includes: Scandinavian Almond Bars (on this site)
My favorite family cooking traditions
Blot Kake (Norwegian Soft "Cake") Sur Kal (Norwegian "Sour Cabbage") Russian Peas
My cooking triumphs
My first loaf of bread (assisted by my very first breadmaker) Making the Scandinavian Almond Bars -- and they worked FIRST TIME
My cooking tragedies
Never, EVER ... under any circumstance: 1. Add ketchup to Beef Stroganoff Hamburger Helper!! (We ordered Pizza that night.) 2. Pour onion soup mix from a bulk bag directly into what you are cooking ... *GAG* (Jam Sandwiches are a great replacement!)

Scandinavian Almond Bars
Marji, THANK YOU! You have brought a very happy memory to life and, if my Norwegian grandmother (who died 30 years ago today, not realizing her dream of making me a baker) were alive, she'd be doing handstands (at the ripe age of 115). I finally made some MARVELOUS cookies (so marvelous that I forgot to make the icing!)! The icing on the cake (no pun intended) is that they were a staple of our Norwegian family, and just the very first recipe that my grandmother tried to teach me. Thank you for the melt-in-your-mouth. almost marzipan, recipe. This will become a regular in our household (even without the nuts, which hubby can't eat -- I made half with and half without almonds). An added plus is that my Canadian-Irish hubby said that they were "sex in a cookie". I had to put them away so that there would be some left for tomorrow. Mange takk, Marji!

Baked Pancake Squares
This is AMAZING ... I did the version with the butter/brownsugar ... but as written the recipe would be awesome, too! For those who said it was bland, do you not realize that pancakes are supposed to be served with margarine or butter and syrup??? The batter is sweet ... I only used 1 1/2 tsp white sugar, 1 tsp of baking powder, and forgot to add the salt. (Good thing... baking powder has enough sodium in it anyway!) Hubby said this goes in my repertoire. Thanks for the recipe! You ROCK! UPDATE: Once again, we were out of pancake mix and (amazingly) we had the ingredients on hand -- Made it again -- without the caramelized topping ... OMG !!!! (as the kids say) Melt in your mouth, absolutely fantastic -- It's easy and fills you up (but it does not feed 16 servings -- okay, so the measurements were made to make it attractive to calorie counters -- it does not make this recipe bad! -- This is definitely a keeper (and so much cheaper then pancake mix!)

Apple Oatmeal Crisp
I am culinarily challenged. so made it exactly as written (as I was craving some comfort food). This was amazing! A little richer than I remembered, but simply amazing! I may cut down on the brown sugar and flour next time, but this was absolutely amazing! Thanks, Dave!
