Norwegian Pancakes - Pannekaken
These are like Swedish pancakes and I amended mine slightly so that it would be similar to my mother-in-law's own (she doesn't have a recipe herself, so I had to guess as to the measurements!) I changed it from 1/4 tsp salt to 1/2 tsp and added a 1/2 tsp of vanilla sugar to the mix. I too used an electric mixer for mine. My Swedish husband enjoyed them with strawberry jam on top.

Jewish Shortbread
I couldn't be bothered to make them into crescents. I made them into rounds. I didn't want too much sugar on it so I just rubbed some on the top rather than rolled them. But I LOVE this recipe. I have been trying to find it for quite a while now. I grew up in Toronto and there was a little Jewish bakery by me that made just these sorts of cookies. They closed down and I missed tasting these. Thanks for the recipe!

Quick and Easy Brownies
I used 1 cup of walnuts, an extra teaspoon of vanilla essence and I baked it in a smaller pan so that they became thicker. I had to cook it for approx 25 min longer due to the thickness of the brownie, but the outcome was divine. I topped it with a milk/dark chocolate ganache and sprinkled chopped walnuts on the top. A generous dollop of vanilla whipped cream topped it off! Great if you're a nut fan and a definite keeper in my recipe box! My husband LOVES it!
