Spanish Rice Original
i used brown rice but found this recipe a little bland. will spice it up or keep looking for something to serve with the fajitas.

Zucchini Brownies
these came out very cakey but my zucchini was super fresh from the garden to the grater to the bowl. I also did not care for the icing and will use my own fav brownie icing in future. Still, all in all, a great recipe for using up zukes that have taken over the garden.

Southwestern Lentil Salad
I love this salad!!! I dropped the oil to 3/4 cup and used a can of those mini cobs of corn. I also used a mix of coloured bell pepper and added a chopped jalapeno for some zing. A definite keeper.
