Beef Pot Roast
Loved the flavor of this! Mine was a bit dry, but I think that was my fault (over-cooked & didn't use a tight enough lid). I can't wait to make it again.

Beef Enchiladas II
Very yummy! I didn't follow the recipe exactly, though. I added taco seasoning and also used Colby cheese & canned enchilada sauce. My husband said, "These are the best enchiladas I've ever had."
