A Firefighter's Meatloaf
My husband and I absolutely loved this recipe. The salsa, onions and garlic give it a nice flavor and just a nice little kick. I forgot to put the barbecue sauce on at the end, because I was anxious to taste the meatloaf, but it tasted just fine without it. I will keep this recipe and make meatloaf using it from now on.

Biscotti
I wanted to see what kind of biscotti recipes there are out there and found this many but this one is the same recipe that I have. I made biscotti for the first time about a month ago, using this recipe and have had to make 4 batches because everyone I have given them to just love them. It is my mother-in-law's recipe who was Polish but my father-in-law was Italian and she learned to cook and bake his favorites. This recipe is the all time best because it is not too sweet, is crunchy but not tooth breaking hard. I'm not too big on strong anise flavor so I used 1/4 tsp. anise extract and 1/2 tsp. vanilla and there is just a nice hint of anise. I also use 1 cup of walnuts in the dough. I've given them to friends and family and everyone loves them, especially my grandchildren.
