Roast Sticky Chicken-Rotisserie Style : After making this twice according to the recipe, this 3rd time I roasted it in a clay roaster. After 1 hr. @ 450 F, the oven temperature was reduced to 350 F. Upon lifting the lid, I found that the skin was crisp! Cooking in a clay roaster is unusual in several ways: 1)the roaster & lid are soaked in water first. 2) It is then filled & put into a cold oven. 3) The temperature is usually high, because the clay protects what's inside while simultaneously maintaining a moist cooking environment with the chicken self-basting.
