Beef and Bean Chimichangas

The filling was great, but I wouldn't recommend baking them. Just buy nice soft tortillas and fill them and eat them fresh! I also used green taco sauce (made with tamatillos) and some green chilies. Very good.

Curried Coconut Chicken

Wonderful curry! I made it vegetarian by replacing the chicken with cauliflower, bell pepper, and sweet potato. I also used 4T. tomato paste and no tomato sauce or stewed tomatos.

Cream of Pumpkin Soup

This soup is pretty tastey, and very festive in the autumn with all the fall flavors. I added 1/8 t. red pepper flakes for some addditional flavor and also threw in some lentils to thicken it up a bit and make it more hardy. Tastey!

Vegan Red Lentil Soup

With a little extra water I loved the consistancy of this soup, creamy and smooth, but it really lacked flavor. I made it exactly as the recipe stated and didn't care for it. I doubled the curry powder and added a little more cayenne and some salt and pepper and then it was very tastey. I would recommend making it the day before as it was better the next day.

Spanish Rice II

Butter Chickpea Curry

I really liked this simple curry recipe. I did as a few other reviewers had suggested and used plain yogurt and tomato sauce. Great recipe, I will try again using cauliflower.

Moroccan Lentil Soup

With some seasoning changes I loved this soup! But it turned out fairly different from the recipe so I feel my evaluation isn't really fair. I made it into an Indian soup and added some curry and actually used black beans since that is what I had on hand. Good inspiration though!

Absolutely beautiful strawberry sauce, and extremely simple. The only thing I would do is reduce the vanilla, as it was a little overpowering. Otherwise perfect!

Indian Curried Barley Pilaf

As written a 4, but if you double the curry and allspice a definite 5. So wonderful! I also think it would be great with lentils, rice, or quinoa. Also, I strongly recommend using the raisins and almonds. They really put this dish over the top. I even added chicken and made it into a meal in itself. Yum!

Shredded Chicken Tacos

This was excellent! I didn't have any Goya ingredients or the ancho (which I think makes a big difference, but I didn't have it on hand). So i used 3 t. chili powder and 1/8 t. chipotle powder to add the smokiness that ancho would provide. I also used just 1 t. of oregano because I had ground, not leaf. Altogether wonderful! Served in hard corn shells with cheese and guacamole. Our whole family loved it.

Buckeye Balls II

Added an extra quater cup of peanut butter and beat the mixture on high for 2 minutes to make them extra creamy and fluffy. Also, it took me 3 cups of chocolate chips!

Fudge

Perfectly smooth and creamy! I used 2 cups of semi-sweet 1 cup milk chocolate (both nestle), so that it wouldn't be too dark. It is wonderful! I also only microwaved 2 minutes and added 1 t. of vanilla after heating.

Black Bean Pasta

This was great, I cut back on the cumin (because it can really over power) and used marinara instead of tomato sauce. All in all I really liked it!
