Roasted Beets 'n' Sweets
Made a large batch of this for a family visiting from Belgium. They really liked it and it was pretty easy but delish. I cooked it it a roaster for about 3 hours.

Mexican Whole Wheat Flour Tortillas
This works very well. A 1/4 measuring cup works well for determining the size of the ball. My golf balls were too small.

Gourmet Sweet Potato Classic
This is very similar to the sweet potato pudding (the word casserole is an immediate turn off in my family) that I have to make at every family holiday meal. If you increase the butter/margarine, you can eliminate the milk/cream. I have used 1/2 sugar, 1/2 honey with good results. I put it in a cake pan for thinner pudding and more topping. One year when I didn't make this, I was in deep trouble--never skipped again. This is made the night before the big holiday meal (usually with the cooks drinking wine)and is very forgiving if the measurements aren't exact.
