Chicken Cordon Bleu II

Wow, this was fantastic. The only change I made was that I omitted the bouillon and used chicken broth instead of the white wine. The toothpicks were a little hard to see and quite difficult to get out while the chicken was hot. I think I'll try string instead next time. If you use toothpicks, be sure to count how many are in each piece.

Croutons

I used whole wheat bread and experimented with the crusts. Honestly, they're just as good with crusts on--I can't tell the difference in taste. I also included some basil and Parmesan to taste. Excellent recipe--I had to use a lot of self control not to eat the entire batch right out of the oven. Yum!

It basically tastes like berries in whipped cream, which is good, but kind of boring. It's missing something for texture. I also wasn't wild about the amount of trans fat involved.

This worked out great in the bread machine. It's a very wet dough, but turns out fine. It was much too salty for me, so I'm going to reduce the salt to 1 teaspoon next time I make it.

Creamy Spinach Soup

Excellent taste--I kept wanting more. Instead of the half and half, I used one cup heavy cream and the rest skim milk (strange, I know, but it's what I had on hand). I omitted the bouillon and used chicken broth in place of the water. Next time, I think I'll try croutons on top--I was missing some texture. I'd also like to increase the amount of spinach.

Slow Cooker Turkey Breast

Good to know that this is do-able in the slow cooker--it comes out unbelievably moist. However, the meat has little flavor. I wanted something more intense, less bland. Makes pretty good gravy.

Calzone

The dough has great texture, but tastes bland, non-descript. I made the dough exactly as indicated, and it made two huge calzones--each calzone will be two to three servings per adult (four to six total meals). I filled mine with ricotta, mozzarella, spinach and I put the same on my husband's but added mushrooms and pepperoni as well. Cooking time was perfect.

Flourless Peanut Butter Cookies

I changed the ingredients to the following: 1 c. peanut butter, 1/2 c. granulated sugar, 1/4 c. brown sugar, 1 egg, 1 t. vanilla. I definitely recommend making a double batch--these go quickly! We loved this so much I shared it with a friend.

Delicious Ham and Potato Soup

I made several changes to this recipe: I omitted the celery, water, chicken bouillon, and pepper. I used 1 T. dried onion instead of chopped fresh, increased to 1 c. ham, and decreased to 4 T. butter and 4 T. flour (we preferred whole wheat flour instead of all-purpose). I also played around with substitutions for the meat and adding some veggies--it's such a versatile recipe that I can really get a great meal and clean out my freezer at the same time!

Country Green Beans

We love this recipe. I used 1/8 t. of garlic powder instead of the clove of garlic and also 1 T. of dried onion instead of chopped. (I just don't keep those fresh ingredients on hand.) I think it was a little much on the onion, and plan to try 2 t. of dried onion next time. Used water as called for instead of chicken stock as others recommended. These were soo terrific I wanted to eat the entire bowl. Great way to get my veggies.

Garlic Mashed Red Potatoes

My husband and I love this recipe. I've made it twice, and we like it best with the skins left on (tastes great, looks better, and also adds nutrition) and double the amount of salt called for. I don't keep cloves of garlic on hand, so I used 3/8 t. of garlic powder. I also chopped the potatoes much smaller than quarters so that they'd cook more quickly. I think I could eat the entire bowl of these. Yum!
