God has a way of keeping the universe in balance. He paired me (an excessive compulsive baker) with my wonderful diabetic (type 1) husband. Lets just say I have a lot of very happy coworkers. It isn't as cruel as it sounds I also love healthy food and am slowly but surely working on my Nutrition degree. So even if I bake "bad for you" deserts I try and sneak something healthy in. Favorite substitute apple sauce (unsweetened of coarse) for the butter or oil in a recipe.
My favorite things to cook
Cookies, cakes, elaborate or very simple. Nothing puts a smile on someones face like a sweet treat. I also love trying new things.
My favorite family cooking traditions
My mom is a great cook and a great teacher. As soon as I could hold a spoon and stir that's what I was doing in the kitchen. My mom's favorite meal and one of her best is Thanksgiving dinner with all the fixings. And we don't have it for just Thanksgiving. Pretty much any family get together or holiday she will make it into a feast!
My cooking triumphs
Every year for my husbands birthday I try and make him a favorite cake, either from his childhood or just one he really likes. Last year he described a layered graham cracker cake his mom made for him when he was young that was very moist and had pudding in it. I found a few receipts and fiddled with them and it turned out just how he remembered it!
My cooking tragedies
Oh dear.. well anything involving a slow cooker. What? You say. How can someone have issues with a slow cooker? Well about every other month or so I get back on my slow cooker horse and I try to figure out why I was scraping charcoal and chicken bones off the bottom of mine the month before. Just to fall once again into the soupy mess of over cooked chicken and shriveled little veggies. But I will not be defeated!
