Sweet Potato, Carrot, Apple, and Red Lentil Soup
I looove this soup! It was delicous although not enough to serve 6 for sure! The only changes I made were adding water (4 Cups) and some bouillon (only enough for 1.5 Cups not 4)instead of veg broth and omitted the salt as a result, I used ground ginger instead of the real thing and ended up adding milk to the soup at the very end before serving. I simmered my soup too long so the milk help 'thin' it out as well as cool it down a bit! You won't believe how delicious this was, I was definitely surprised. It's also extremely easy and quick to make!
