Oven-Fried Catfish
The recipe was very easy to make. I don't eat fish, but my fiance absolutely loved it!!! He said he didn't even need to drench the fish in ranch dressing or ketchup as he does with most meat he eats. That in itself makes this recipe a winner. The only changes I made: I marinated the fish in the seasonings and some lemon juice for a couple of hours (b/c I wound up having to run out as I was starting to prepare it), but I omitted the salt. Instead of plain cornmeal, I rolled the fish in Louisiana fish fry and baked it with onions on top.
