Baingan Bharta (Eggplant Curry)
I'm not Indian, so I can't attest to authenticity, but it was delicious. However, as a time-saver, I baked the eggplant already cut into cubes, and left skin on. It was just as good, and much much less time and labor.

Dilled Vegetable Barley Soup
Excellent basic barley soup recipe. The (small) changes I made were to add some squash, no turkey, and red wine instead of wine. Seems to be a very forgiving recipe.

Black Cherry JELL-O Poke Cake
I don't know what I did wrong, but I ended up with cake topped with Jello, nothing like the picture.
