About this Cook
I'm married and the mother of 3 beautiful children. I work outside of the home, and we are active in sports and scouts. Half the household is vegetarian, which makes dinners a challenge. Cooking during the week must be quick and easy, so I like to have at least one nice meal on the weekend.
My favorite things to cook
Lately I've been making alot of wraps, or playing with my panini grill. I enjoy soups, sandwiches, salads, and pasta.
My favorite family cooking traditions
Family dinners are when all my brothers and sisters gather at our father's home. Fresh kielbasa at Easter, Polish Meatballs at Christmas, and Charlotte Russe as a birthday cake. Well worth the drive!
My cooking triumphs
Stuffed lasagne rolls, perogies from this site, and homemade tortillas (also from this site) are the things I'm most proud of making.

I try to put the tragedies behind me, and vow never to speak of them again.

Slow Cooker Italian Beef for Sandwiches
Never having been in Chicago, and having never had an Italian Beef Sandwich, I have nothing to compare this to, but this recipe definitely makes an amazingly tasty sandwich! Following some suggestions, I used two packages of Italian Dressing mix, added some pepperoncinis, and used a chuck roast for easier shredding. My kids and I ate it on a hoagie roll with some of the "juice" to dip, but my husband broiled it with some sliced provolone, and claimed it awesome that way as well. Thanks for the recipe.

Orange Cream Fruit Salad
This has become the most requested dish for me to bring to my daughter's Girl Scout parties...all the girls just love it (my family loves it as well). I don't change a thing. Thank you for the recipe.

Best Tuna Melt (New Jersey Diner Style)
Kids loved it, I loved it. Thank you for the recipe. The only changes I made was to omit onions, and to add a couple of slices of avacado on top. Yum!
