Easy Spiced Brown Rice With Corn
This was yummy and a fantastic side dish, but I made a few changes. I used low sodium chicken stock instead of water, used dried cumin instead of cumin seed (and probably used three times the amount), and used fresh corn instead of frozen. I added the fresh corn almost at the end of the cooking process, just to heat it though. Thanks for the recipe!

Chicken Lo Mein
This was yummy, but I made a few changes. The grocery store didn't have shiitakes when I went so I used portobellos instead. Also, I added some sliced red peppers that I needed to use up. I used tagliatelle noodles instead of linguine. I would have given this five stars, but since I made these substituitions, I'm not sure how it would be in its original state. All the same, looking forward to making it again soon...I couldn't stop eating it! Thanks!

Seared Scallops with Tropical Salsa
Living on an island, with access to some fresh, tasty seafood, I am always looking for new ways to prepare fish and shellfish. This tropical salsa recipe was AMAZING as is. I especially loved all the cilantro. It was a big hit with DH as well, and I'll be making this again soon. Thanks for the recipe!
