About this Cook

My favorite things to cook
Fried catfish, beef stew, casseroles, and quick meals that taste like it took longer than it actually did. I never liked onions, but now that I've began cooking more, I use onions in just about everything! They're ACTUALLY good when cooked and you can't even taste the onion taste, they give off some other flavor that is just so good! Also, I've found that refrigerated onions tend to not make me "cry" when cutting them.
My favorite family cooking traditions
Since I'm from the South, of course for New Year's we DEFINITELY cook greens (usually cabbage), cornbread, black-eyed peas, and a meat (usually baked or fried chicken, and also sometimes chicken and neckbones)! This is one of my favorite meals to make for Sundays!!
My cooking triumphs
I have so many, but the best ones are where I make something for the first time (from memory, not necessarily following a recipe) and have it turn out right and look good and most of all, TASTE GOOD! Homemade Cornbread!!
My cooking tragedies
One time a long time ago, I wanted chicken tetrazinni but I never saw anyone else make it, nor did I ever view a recipe for it. I kinda knew what was in it, basic things like of course the pasta, peas, carrots, chicken, and cheese, but I didn't know the order to make it. It turned out a DISASTER! I tried to eat it but I wound up throwing it all away! I was so glad no one else was there to see me do that or to ask to try it!

Easy Chicken Tetrazzini
This was pretty good. I took other reviewers advice and "doctored it up" a little bit. I chopped my chicken up before boiling, then I boiled my chicken in water with a few chicken bouillon cubes, garlic powder, a little bit of minced garlic (that comes in the jar), onion powder, chicken seasoning, italian seasoning, lemon pepper, and regular pepper. Then I strained it from the water. I also boiled my spaghetti noodles in water with chicken bouillon cubes for extra flavor and right before I put a lil salt into the water for flavor. While the noodles were boiling I took a can of carrots and diced them up. Then I strained the noodles and lay them in the casserole dish 9x13. Then I took a can of cream of chicken and a can of cream of mushroom and some milk and heated it on the stove. As it almost began to boil I added the can of carrots that I'd diced and a can of peas (I drained the juice off first). Note-I thought I had regular peas, but after I'd opened and poured that I'd gotten the ones with the mushrooms and small pearl onions. But it was ok I think it added to the flavor of the dish as a whole. Then I added a little shredded cheddar, a lil shreeded mozarella, and a lil shredded parmesean cheese to the sauce mix. Then while that was going I chopped up the chicken a little bit more so there wouldnt be huge chunks in my casserole, and spread the chicken across the noodles. Then I poured the sauce over it all and spread it out evenly ad topped it all off with shredded chedd

Aunt Fannie's Dinner
This was pretty good! I didn't use the exact measuring units per se, I just adjusted to what I thought looked/tasted right (I like to think I'm some super cook lol)! My friends came over and they enjoyed it. I took the advice of everyone else and tweaked it to my liking. I didn't have shredded cheese or anything so I went 'old school' used american cheese slices. After it was all in the pot together, I put half the mixture into a casserole dish and took three slices of cheese and split them in half and put them on top, then I spread the other half of the mixture on top and did the same thing again with the cheese. Then I put the whole dish under the broiler for about 3 to 4 minutes, just enough for the cheese to melt. Then I took it out, and voila, dinner was served! I served it with grated Parmesan cheese and couldn't stop eating it. I went back for seconds, and thirds.....

No Sour Cream Beef Stroganoff
This was okay. I tried it bc I wanted to do something with ground beef other than lasagna or spaghetti or meatloaf. But I didn't have sour cream, thus I used this recipe. I used ziti pasta. I'd make this again, but its nothing to write home about.
