Vicki's Hush Puppies
I used corn oil to fry these. At first my heat was set to 7 (out of 10) and the oil started smoking, and the dough blackened on the outside and was uncooked on the inside. I would suggest preheating the oil for 10 minutes on medium low setting (4 out of 10) on your stove-top, and then cooking until golden brown. I added garlic and jalepenos. I didn't have self-rising cornmeal or flower, so I added 1 tsp baking powder. They came out better than any restaurant hush puppies I have had in the South!

Blackened Salmon Fillets
This recipe is AMAZING. However, it filled my house with smoke! Use Peanut Oil or Corn Oil instead of butter to avoid setting off your smoke alarm. I have cooked salmon numerous ways, including the Fircracker Salmon recipe from the top 20 on this site and this recipe is the best way to cook salmon I have ever tried.

Cream of Wheat Griddlecakes
Light, fluffy and delicious pancakes. Used whole wheat flour of course, added a half cup of blueberries and used brown sugar instead of white. Seemed very nutritious.
