Luau Chicken

Used a can of pineapple chunks. Left out the ketchup and cornstarch. Used fresh ginger. Served it over quinoa though brown rice would be good too. Turned out great and will be making it again!

I made a few adjustments. I used vegetable broth instead of water. Mixed in chopped cilantro, 1 egg and a little lime juice to the meatballs (no milk) and baked them in the oven first. Chopped up 3 tomatoes (didn't have any carrots) and threw in some kale for added nutrients. Then I threw everything into the crock pot, set it on high for about 4 hours. Tasted lovely. We added a little freshly squeezed lemon juice before eating to give it extra zing. Will make again!

Restaurant-Style Zuppa Toscana

Just made this tonight and loved it! I used the crock pot, set it on high for 3 hours with everything except the cream, kale and bacon, I stirred those in about 5 minutes before serving. I did add about a half tsp each of crushed red pepper and ground white pepper. Zuppa Toscana is our favorite soup at O.G. and after tasting this my husband and I couldn't get over how close in taste this was! Thank you for the recipe. Next time I might try a spicy Italian sausage to give it a little more kick.

Tasty Lentil Tacos

A great vegetarian meal. I make these regularly. We also use the lentils to top lettuce (we like spinach) and then we include the other ingredients for a taco salad. Tasty and healthy!

Simple Scones

I LOVE this recipe. It is easy and uses ingredients that I almost always have on hand. I have made these for many occasions and always get rave reviews. My husband prefers them with chocolate chips but I also like the Lemon Blueberry and Orange Cranberry versions but I double or even triple the rind. The only other adjustments I make, I sub 1 cup whole wheat flour and add 1 teaspoon vanilla.

Peanut Butter Vegetable Chicken Soup

I made this tonight and my husband and I both loved it. I didn't have zucchini so I used brussels sprouts in it's place. I also added cilantro, cayenne and a little cumin and lemon juice. It was very yummy and I will be making it again! I plan on trying it without the chicken during Lent, I may sub tofu instead.
