I really learned to cook when I had no money after graduating from university. Becoming a vegetarian in the 19990's, I learned more by translating my favorite recipes into veggie friendly versions. More recently I have been challenged by getting vegetables from a CSA farm. Weekly boxes of delicious organic veggies have forced me to find a way to cook many new things I would have never chose to buy and cook.

Fabulous Roasted Cauliflower Soup
This was fabulous! I did make quite a few changes to the recipe. I substituted leeks for the shallots, used vegetable broth instead of chicken broth (to make it vegetarian) and used milk and a tablespoon of butter instead of cream. Just delicious.
