Zucchini Cornbread Casserole
It was wonderful! I only made a couple of changes. I cubed my zucchini instead of shredded and I added corn!

Spinach Quiche

Manicotti Alla Romana
It was very good but I'm still not sold on having the "meat" (I used a meat substitute to make it vegetarian) inside of the shells. It made it a little soggy.
