Fast and Easy Tofu Lo-Mein

Wow, yummy! Tried this recipe because my Mother-in-law is vegan and they're visiting soon. Wanted to test drive it before they were here and was surprised by how much I enjoyed it. The Tofu does need seasoning while frying though, was a smidge bland. Will also add a little red pepper since my In-Laws are Indian and like spice.

Quick and Easy Green Chile Chicken Enchilada Casserole

Wonderful recipe. Didn't char the tortillas as that really is a pain. I followed the advice on mixing the sour cream with the enchilada sauce and it did help. I will be making this again soon :)

Angel's Old Fashioned Beef Stew

This came out extremely tasty. Definitely needed more salt...alot more. I ended up using 2 medium yellow onions instead of small boiling onions, as that's what I had on hand. I would say not to add the veggies until the last hour for still soft but not mushy potatoes. Added some thyme and a dash of worcestershire sauce for flavor like I read in other reviews.

Sugar Free Blueberry Coffee Cake

As a gastric bypass patient, I'm always looking for sugar-free or low sugar recipes to try for my sweet tooth. Unless you do a splenda-sugar free maple syrup blend for the topping (rather than the splenda brown sugar), this isn't really sugar free enough. It was delicious though, I do recommend eating it warm. Even hubby liked it and he's usually not a fan of my sugar free treat attempts.

Roasted Rack of Lamb

I normally don't like lamb but cooked this for hubby's birthday (he loves lamb). It was a huge hit with him and the other folks who came for dinner. I ended up with 2 racks totaling 2 lbs., cooked for 20 minutes and let sit for 10. Came out about medium. Next time I will probably cook for a few more minutes for a little more doneness, but I'm personally not comfortable with such red lamb. Was very tender and had amazing flavor, I will definitely do this again.
