This is such a great recipe and I feel so much better not using all of that oil needed in other recipes. I even cut the butter in half and substituted with apple sauce. Tasty!

My husband and I love this recipe; it really reminds us of Jamaica! You can add or not add anything and it'll still turn out great. I make a double recipe and use 1/2 to marinate the chicken, and then cook the other 1/2 in a sauce pan on the grill to pour on top of the cooked chicken, so it's extra saucy!

Excellent!! Made as is, except I added the refried beans to the meat mixture along with diced onion and jalapeño and I poured extra enchilada sauce over the stuffed shells before baking to prevent the pasta from getting dry. After baking, I sprinkled with fresh cilantro and added some sour cream and this was a hit!! Leftovers were really good too. Will make again, it was a nice variation from regular enchiladas!
