Crustless Cranberry Pie

very easy = 5 stars; taste = 3 stars; i cut the white sugar to 3/4 cup (that was the only change i made); it was still a little too sweet for us & the texture was a little odd >> i probably will not make this again unless hubs requests it...if i do make it again i'll cut the sugar down to 1/2 cup

Pork Medallions with Balsamic Vinegar and Capers

This was superb!!! Even better than I expected. I served it with plain mashed potatoes & steamed broccoli...I'm so glad I doubled the sauce per others suggestions...it was fantastic over the potatoes!!! Thanks for a wonderful dinner!!!

Cubed Parmesan Potatoes

i used fresh lemon juice, didn't add the parmesan until the potatoes were cooked, then i stirred in the parm > i then put the potatoes in a pie plate and sprinkled grated parm on top and put it in the broiler for a few mintes > i'll add even more parmesan to the top next time > it's a keeper

Chicken with Lemon-Caper Sauce

this is wonderful & lemony...i added 1/4 tsp paprika to the flour mixture and increased the wine to 1/2 c...next time i will use half the flour mixture (had way too much left over) and double the sauce

London Broil

i left out the MSG & pepper > i used 1/3 cup canola oil + 2 Tb fresh lemon juice + 1/2 t salt + 1/2 t powdered garlic + 2 Tb chopped fresh parsley + 2 Tb tarragon vinegar > next time i'd up the vinegar to 4 Tb > it was a little dry but i think it was because i didn't let the meat rest > i'll defintely make this again

Strawberry Muffins

after reading the other reviews i added 1 tsp of grated lemon rind, 1/4 brown sugar & topped the muffins with a mixture of 1 T sugar, 1 T brown sugar & 1/2 tsp cinnamon...they were baked through but the strawberries make them seem "wet" >> hubby liked them yesterday...i hope he likes the one i put in his sack for breakfast this moring!!! i'll have to wait to see how he liked it before i'll decide to make them again!

Lemon Streusel Muffins

i reduced the sugar to 3/4 cup, added 2 tsp grated lemon rind, not having a fully stocked pantry yet i substituted 1/8 tsp cinnamon for the nutmeg & used walnuts in the topping...next time i would cut the recipe in 1/2...this made 24 muffins...i loved them warm out the oven....this morning i had one with my cup of tea & it wasn't as good as yesterday's -- but it was still nice

Quick and Easy Chicken Noodle Soup

i had some left over roasted chicken to use up. i added some broccoli florets in place of the celery & cooked the pasta separately. for the amount of time/effort spent this was a very satisfying meal!

Sugar Coated Pecans

i made these quite a few years ago from a similar recipe....i didn't read the recipe correctly & beat the egg white till stiff & proceeded....they came out great that way too...if i remember correctly i turned the oven way down (like for baking meringues) because they were looking odd at some point...after a while i turned the oven off & let them dry out...they came out more like candy....i never realized i made a mistake until the next time i read the recipe...lol
