Irish Lamb Stew

Fabulous. Made everything in a stock pot. Didn't see a reason to use the frying pan. Also, only used 4 pounds of meat and 1/4 pound of bacon. More than enough. Also, remember how much salt is in the bacon before adding a bunch to your flour mix. Deglazed with wine. I love the Guiness and mashed potato ideas - I will do that next time.

Blueberry Nut Oat Bran Muffins

Mmmm. Mmmm. Good. Moist, flavorful, and not too dense. As someone suggested, I used two whole eggs instead of egg substitute. Everything else the same. Unlike a lot of muffin recipes, the batter fills the muffins tins to the tops. It is probably a good idea to use muffin liners, as I did not and the blueberry juice went syrupy during cooking and kinda stuck to the edges at the tops. I used a knife to circle around each tin and gently pull out each muffin.

Cracked Sugar Cookies I

Buttery loveliness. I did notice that I had to let the cookies sit on the baking sheet for a couple of minutes before removing them to a wire rack, otherwise they sometimes broke into pieces. Definite 5 star.

OK, but rather unexciting. I should have used a sauce to liven things up, I think. I did add some lemon zest to the mix, which I think generally improved overall flavor.

Oatmeal Chocolate Chip Muffins

The incredible disappearing muffin. Fabulous. Used a tad less oil, added 1/2 tsp of vanilla, and didn't put the pecans and sugar on top. Didn't really need it.

French Beef Stew

Outstanding. Perfect tang. I deglazed with wine, as others suggested. I thought the stew was going to need onions, but alas, it was perfect without. My picky kids cleaned their bowls and asked for more.

Grandmother's Buttermilk Cornbread

The best cornbread recipe I've tasted - and I'm from the South. When baked, it got nice and golden on top - crunchy texture - and very soft and buttery on the inside. My husband's eyes rolled back in his head. He'd seen Heaven for a bit. Thanks!

Thin Egg Pancakes

Heavenly. Changes: I added a teaspoon of vanilla extract to the milk. Also, after flipping, I sprinkled about two teaspoons of chocolate chips on to the pancake. When I folded them, the chocolate melted beautifully. A dollop of whipped cream atop, and you've got very happy (and very hyper!) kids.
