Chicken Cordon Bleu Casserole

Pretty good. Threw all the ingredients in the casserole dish and topped with bread crumbs and baked. Served with brown rice. With the rice it was very filling and tasty. Easy and quick.

Tasty! The sherry makes this dish, so do not omit it! This is kind of like a milder chicken alfredo. A simple easy dish.

Spinach Quiche

Delish! I also divided this recipe into 2 pie crusts. Very cheesy and tasty. Couldn't find the herbed feta so I used regular and added my own herbs. Used fresh mushrooms. A new easy favorite!

I really liked the french fried onions. Not too crazy about the curry in this dish, but it was alright. Probably will just omit the curry next time. Overall, pretty good.

Salmon with Brown Sugar and Bourbon Glaze

This is the best sauce ever! Paired perfectly with the salmon. This would be great for a nice dinner when company comes over served with rice and asparagus or green beans. A new favorite here!

Sesame Lime Steak Wraps

Marinated for about 2 hours. The flavors were SOOOO excellent together. The crisp crunch from the lettuce perfectly accented the tangy sweet saucy beef. This is a favorite now at our house! Thanks so much for sharing!

Argentine Meat Empanadas

Excellent recipe! The dough is not quite like the empanadas I remember. This is better! The puff pastry is so light and airy and delicious. The filling was tasty too. Had lots of extra filling. Might need to use 2 packs of the puff pastry. I can see changing up the filling to whatever suits your taste. Will definitely make again!

Slow Cooker Chicken and Dumplings

Wonderful homemade taste without the work! Very creamy. Great right from the crock pot. However I refrigerated the leftovers and the next day it tasted chemically. I don't know if it was the preservatives in the biscuits or what. Definitely will make again but will make sure to finish off in one day.

Chicken Fettuccini Alfredo

Flavorful and tasty. Used milk instead of half/half and it was still good. Will try next time with it. Didn't need to add the salt. The colby jack cheese gave it an interesting flavor. Will definitely make again!

Peruvian Lomo Saltado

My family is from Peru and this is a favorite when we visit Lima, and at home. I marinated the meat in the vinegar and soy sauce. Gave the meat a nice flavor. Used red onion and made my own french fries. Also used cilantro instead of parsley and added quite a bit of minced garlic. I used some aji amarillo in a bottle I purchased last time I was in Peru. Pretty much impossible to find fresh aji in the states from what I have seen. Served over rice! Yum :)

Spanish Rice Bake

Delicious and flavorful! Added some minced garlic and increased rice to 1 cup (used brown rice also). Using brown rice I had to simmer the concoction a bit longer, but it was worth it. I used cheddar and some pepper jack cheese I had on hand for the top. New favorite here! Fresh tasty goodness :)

Cheesy Sausage Zucchini Casserole

So tasty and fresh! Used about 8 oz fresh mushrooms and added some minced garlic as well. Threw in some green pepper I had on hand. Also increased the rice to 1 cup and I used brown rice. Used some leftover mozzarella melted on top. Delicious! A new favorite at my house! Thanks for sharing :)

Authentic Enchiladas Verdes

Fresh and delicious! Next time I will break up the tortillas into bite sized pieces after frying in oil and before dipping in the green salsa. Makes eating a little easier. Other than that, a wonderfully fresh meal! Will definitely make again :)

The flavors were fresh, crisp, and delicious in this dish. Followed the recipe exactly and it turned out wonderful. I never used panko crumbs before but they were awesome. The fish browned and crisped up nicely. Just the right amount of spice and crunch. Thanks for this keeper!
