sautee the veggies, use more peppers and onions, pepperjack cheese rather than monterey, and cumin to taste would make this excellant!

Dutch Apple Pie with Oatmeal Streusel

HOLY COW!!! this is the best pie I've ever had! I omitted the lemon and used Pie Crust IV from this website, you really need to make your own, it makes a big difference!

Chuck's Favorite Mac and Cheese

it was alright. I thought it was a bit too sour tasting... probably because of the cottage, parm, and sour cream, which are all a bit sour tasting. Also the consistancy was a bit off... probably the chunks of cottage cheese... one reviewer suggested sending it through a processor, which I may try if there is a next time. maybe I'll leave out the sour cream and just use half and half, or butter and milk

Beer Margaritas

really sweet so I added an extra can of water. also, I divided the tequilla in half and it was still kinda strong.... I could not even imagine adding the whole 12 ounces! that would have been like a shot!

Avocado Feta Salsa

Mmmm... this is definitely one of the best things I've found on this site in a while... soooooo yummie! only thing I did different was replace the oregano and parsley with fresh cilantro like some of the other reviewers suggested. DELISH!

Guacamole

OMG this is soooooooo good!! I've never found a recipe on this site that deserved 5 stars without any changes to the ingredients. I would give it 100 stars if I could. I had never really liked guacamole much until I had an urge to try making me own... now it's my new favorite! Delish!

Mock Tuna Salad

Wow! I never knew that mashed chickpeas could replace tuna! That's one of the only things I've missed in the 8 years of vegatarianism, and I know it's not the real thing, but after 8 years, you think I know the difference!? I made it how I used to make tuna salad - with chopped dill pickle rather than relish and MmmmmmHmmmmm. It is GOOD!

Tater Tot Casserole II

I made the recipe "as is" which is why I only give it 3 stars. It was just okay... a little bland, and while I don't like mushrooms, I love greenbean casserole at the holidays so I thought I would like this too. It just didn't do it for me. I think I will try this again but make it "mexican" style by substituting the mushroom soup with cheese soup and adding jalapenos, black beans and corn. And probably use only half a can of onions... a whole can was just too much.****UPDATE**** OMIGOSH, tatertot casserole is sooooo good with the substitutions I made. I didn't add black beans, but I did use cheddar cheese soup mixed with corn, jalapenos, half the amount of sour cream and cheese, and some taco seasoning. It was soo delish. Also, I sprinkled crushed tortilla chips instead of frenches onions and sprinkled more cheese on top. This is a great alternative to those who don't really like mushrooms!!

Baked Potato Soup

Very good even with the changes I made. I'm a vegetarian, so I ommited the bacon all together and sauteed the onion and garlic in butter, and instead of chicken broth I used vegetable broth. It is sooooooo good. Also, I created a rue with the flour and butter becuase I used milk instead of hald and half (all out). This was probably the best potato soup I have ever had... and it tasted even better a couple days later!

Easy Southern Biscuits

I just pulled these out of the oven... very yummie. Not really buscuit-like, but very good in their on right. I used fat free mayo because it is all I had... I was a little afraid because baking with fat free stuff sometimes doesn't turn out right, but these are very good. I baked them until they were golden brown and a little crispy on the outside. I didn't used paper-liners. Just sprayed the miffin tins with baking spray. VERY EASY to make and definitely worth a try!

Chocolate Chip Banana Muffins

OMG, these are SOOOOOO good. only thing I did different was use whole wheat flour rather than white, and used egg beaters instead of regular eggs to make a little heathier. Everyone LOVED them. I think I will use a whole cup or more of chocolate chips next time. soooo goooooood

Taco Pies

When I made this, I followed the suggestion of some of the other reviews by adding taco seasoning and onions to the meat. I thought this was VERY good, but without the seasonings it would definitely be bland. Also, I don't really think the flavor of the pie shell went well with all the taco flavors, so next time I think I will layer a couple of tortilla shells instead. VERY yummie and definitely will become a regular meal

Homemade Black Bean Veggie Burgers

I thought these would be really good based on the other reviews, but I wasn't a big fan. I've been a vegetarian for 8 years now, and I thought this recipe would be delish, but I was disappointed. I just don't think the spices meshed well together... I don't know... something was just kind of off with the flavors. I think I will try these again but use different spices.

Colcannon

Just finished making and eating this. And let me say, this stuff tastes WAY better than I thought it would! Even my picky, cornbread raised, hot sauce lovin' husband liked it... and he DEFINITELY doesn't like this kind of stuff. The only things I did different was saute the leeks in some of the butter first, cut the butter down by half, and used nutmeg instead of mace like another reviewer suggested (couldn't find mace anywhere). Usually the recipes on this site are a hit or miss with me, and this colcannon is most certainly a HIT. Love it! Can't wait to make it again!

Costas French Market Doughnuts (Beignets)

very yummy, but cafe du monde will always have one up because they have a secret ingredient - cotton seed oil! you really can't find it anywhere, and if definietly gives it that extra something. These come pretty close though
