Fiesta Meatloaf
I made this meatloaf for Wednesday night dinner at church. I received a lot of compliments on the meatloaf, but I wasn't that impressed with it. It was a little on the bland side to me. It needed more salt and more pep. It was not dry and that is a plus.

Petite Sausage Quiches
I have made these several times and they are great. I take them to brunches and there are never any left and someone always asks for the recipe. The recipe is versatile as well. I don't think I ever use the same meat or cheese. They are all good.
