Foil-Baked Chicken
I was so disappointed by this recipe!! Reviews were great and the ingrediants are all very flavorful, but this dish was somehow lacking in flavor! I cut the cornstarch in half as other reviews stated and it was still quite gloppy. Tender? yes, but so what when it's gloppy with no flavor. very disappointed and not a keeper.

Chicken Piccata
I tried a chicken piccata recipe from some magazine that was suppose to be from some gourmet chef and it was aweful and nearly imposssible to eat. Then I found this nice little recipe that is perfect! I used white wine and added 2 TSP of capers for the perfect balanced recipe. I definately reccommend fresh lemon juice. It was still a little lemony for my kids, but I will just serve there's plain next time. My hubby and I really liked this!

Cottage Cheese Chicken Enchiladas
Okay, I made this exactly as stated and I have to say I was very DISAPPOINTED! The reviews were all very good, but this dish was just okay. I have a similar recipe(no cottage cheese) that takes just as much prep and is so much better than this one!!!! I'll stick with that one.
