Cream Cheese Pumpkin Muffins

I used fresh pumpkin that was frozen and followed the recipe exactly except that I added some vanilla and a bit more sugar to the cream cheese filling. These muffins were delish!

Fresh Cucumber Salad

I am not a fan of cucumbers and was thrilled to find this recipe, especially because no onions were involved. It's fabulously sweet and mixing fresh dill and fresh parsley was perfect!

The bread had great flavor but the texture was actually squishy like a sponge. Perhaps I did not bake long enough. I will try again and cook a bit longer.

Cola Pork Chops

I browned the chops briefly w/ flour and olive oil. I used ketchup, some spicy BBQ sauce and Dr. Pepper since we were out of coke. EXCELLENT! I think I'm going to try this for BBQ sandwiches.

Golden Potato Soup

This was just incredible. However, I made a few "upgrades." I used leftover sauce from mussels that I made the night before to add to the broth. I also added sausage instead of ham. Simply out of this world. Almost a seafood potato chowder (w/ no seafood). YUMMO!

Strawberry Rhubarb Cream Pie

I think this was a great blend of rhubarb and strawberry. I used Splenda Blend which halves the sugar. I also used store bought crust and covered after half the time. Finally I did what someone else suggested and baked at 400 for 30 minutes, 350 for 20 minutes and rest in the oven for 15 minutes. DELISH - even warm I didn't have any consistency issues...

The Best Seafood Stuffed Mushrooms

These were really great. I didn't have the shrimp on hand but they were good with just the crab. Otherwise I followed the instructions exactly. They weren't dry or anything negative at all. I do suggest rinsing the mushrooms and wiping with a towel to absorb the water and then stemming. This way there isn't excess water in the pan while cooking. Delish!

Fried Cabbage I

The cabbage lovers in my family definitely thoguht this was a great recipe. I used only 2 apples per someone else's review.. next time I would use 3 since I'm learning to like cabbage. I made it lighter calorie by using a Splenda brown sugar blend and a 50/50 butter/Smart Balance mix.

Maple Salmon

Excellent recipe. Salmon is not my favorite but this sauce made it non-fishy and sweet. Delicious. I made it as-is and it was perfect! I did do it in a tin foil packet though and broiled it for a few minutes at the end. THANKS!

Cinnamon Sweet Potato Slices

These were okay. I don't really like sweet potaotes and it was a way for me to eat them. My husband who loves them, thought they were okay but not great. Got the kids to try them because of the cinnamon sugar but no thumbs up.

Marinated Pork Loin

The taste was great! I made it as is; however, we didn't want to cut our tenderloin. Next time, I will inject the marinade in there because that would be terrific! We also baked it and that was good too and the meat was nice and moist!
