Chicken Enchiladas for a Crowd

This is a great recipe and I've made it many times with varations. The can of chopped chilis is drained and the liquid is added to the sour cream and soup mixture. Montery jack cheese was used instead of cheddar and the whole dish was topped with 12-16 oz. picante sauce.

The Best Bean and Ham Soup

Takes a while to make, however it is really tasty. The beans hold together better than expected. I added 2 tablespoons of minced garlic after the first tasting--we're just garlic lovers. Great healthy fare to feed a hungry crowd.
