Spinach Quiche
Quiche was easy & delicious. I only used one TBS. butter...couldn't image needing more. I used goat cheese & Monterey jack. I added two additional eggs to fill 2 deep dish shells. My husband couldn't stop eating it.

Gazpacho
Easy dinner on a warm summer night. I substituted lime for the lemon, fresh cilantro for tarragon, added a banana pepper & a few splashes of hot sauce. I topped with sauteed shrimp & avocado.
