Eggplant Parmesan II
This was my first time making eggplant parmesan and this recipe was great. I had some left-over eggplant and was looking for something to do with it. Instead of using the 9X13 dish, I used a little pyrex bread loaf pan and this was a great portion for my husband and I. Overall the dish was easier to make than I expected and it tasted great!
