Mock Tuna Salad
Perfect! I added celery and used Dill Relish instead of sweet relish. Reminded me of potato salad!

Eggplant Parmesan II
This is my favorite dish! As the other reviewer suggested, after I slice the eggplant, I season it with garlic salt and layer it in paper towels for quite a while before I bread it(with a mix of bread crumbs and parm) and bake it. Also I use just a bit of ricotta cheese in between each layer along with the mozzarella. Delicious!!
