Grandma's Eggless, Butterless, Milkless Cake

I have tried so many desert recipes for my daughter that is egg allergic that end up anything but resembling a cake, brownie, etc. This recipe is just like real chocolate cake! It is wonderful. I made the recipe into 22 cupcakes and baked them for 24 minutes. I copied others suggestions and did half regular sugar with half brown sugar, 8tbs cocoa powder, 1tbs vanilla extract, 1/2 tsp salt, several handfuls of chocolate chips and 1/2 tsp cinnamon. I cooked it in my stonewear muffin pan and they came out beautifully. I stuck a chocolate chip in the top of each right as I took them out of the oven and sprinkled with powdered sugar right before serving. All the kids loved them. No one would ever know there were no eggs in them. What a great recipe! I am so thankful to have finally found an egg free recipe that not only has the right texture but tastes great. Thanks!

Spicy Chipotle Turkey Burgers

It was really good. I used about 5 tablespoons cilantro and would use even more next time. They didn't have the chipotle chili's at my local grocery stores so I used jalapenos and Adobo Criollo sauce. It probably would have been better using the right stuff but it was still good. I served it w/ mayo but it was way better when we added ketchup and a tomato to it as well. I think it would be awesome with a spicy guacamole, I will definitely do that next time. I also put the mozzarella in between 2 small patties turning them into one large one and it was very good like that. I will use more than 1 teaspoon of cheese inside next time though. Oh yeah, I also added 1 teaspoon of cumin which was a wonderful touch. all in all, it is a very good recipe!

Baked Lemon Chicken with Mushroom Sauce

Awesome! I cooked in the skillet like the author resubmitted in a recent comment. I used lime instead of lemon and doubled or tripled the mushroom sauce. I also seasoned both the chicken and the mushroom sauce with salt, pepper and rosemary. I should have used more lime because when I squeezed some on the cooked chicken breast before adding the mushroom mixture it was amazing!

Feta Chicken

Awesome recipe. I copied others advise and added fresh basil to the tomato basil feta as well as breaded both sides of the chicken before stuffing it. I think adding more basil and sundried tomatoes would make it even better but it was awesome just like it was. I also copied the side dish someone else posted: angel hair pasta with a sautee of chopped fresh plum tomatoes, onions, garlic, oregano and fresh chopped basil. She was right, it was the perfect side dish. Great dinner and very easy!

Chicken Tartar Burger

This was awesome! My husband put some heavily oiled aluminum foil on the grill so that they wouldn't fall through the grates. We couldn't believe how wonderful this dish was. so easy and so gourmet. My husband raved and raved.
