Tasty Breaded Seitan
I followed the recipe very closely, except that I doubled the breading mixture (actually needed about 1-1/2 times the amount) and used olive oil for frying instead of vegetable oil. I loved it. Who needs chicken nuggets when you can have these? Thank you, veggigoddess, for this wonderful recipe!!!

Vegetarian Chili
I made this for my son (newly vegetarian, age 19) and husband (non-veg) and they loved it. I used only one onion because my son is not an onion lover. I followed the recipe pretty closely. Like everyone said, it makes a ton of food, so be prepared for left-overs for awhile. In re-reading this info, on a freezing cold October day in Colorado, by golly, I'm heading to the kitchen to make it AGAIN. Thanks for sharing the recipe, julieliz!

Tofu Peanut Stir-Fry
Wonderful recipe! I used a Thai peanut sauce and fresh veggies (broccoli, bamboo shoots, zucchini, sprouts, mushrooms), added fresh minced garlic and canned ginger. After frying all the tofu (about five batches in a wok), cleaned the wok out, put all tofu in, added peanuts and sauce, and finally, the already cooked veggies. GREAT taste and texture.
