I have made this many times throughout the past few months--each time without the meat. Everyone has loved it! It's a perfect adult and child pleaser! It was so good my family of four finished all 10 servings of it by lunch the next day. A must try!

BUSH'S® Red, White and Bean Minestrone

Huge suggestion: don't leave out the sausage. :-) I'm a vegetarian, so I left it out, and I think it affected the entire dish negatively. It lacked a lot of flavor. I still gave 4 stars because otherwise it may have been good.
