Ricotta Pie (Old Italian Recipe)

Reviewed: Jan. 2, 2010
This pie was excellent! Now, I am a fanatical chocolate lover and think that chocolate is wonderful on anything. However, both my boyfriend and I agreed that this recipe might be better WITHOUT the chocolate...however, it was still delicious. I had a bit of difficulty with the crust. I'm not sure what I did wrong, but I had a terrible time rolling it and getting it into the pan without it cracking and breaking...it just seemed dry when I was trying to roll it out. But the taste of the crust was wonderful and different than pre-made crust, so I wouldn't substitute it. It's actually sweeter than premade crust.

Little Smokies

Reviewed: Jan. 2, 2010
These were delicious and so easy to make! Because I made them on New Year's Eve, and didn't go to the store until that day, the regular smokies were sold out. Instead, I used cheddar smokies, and they were delicious in the recipe...I may always use them!

Sausage Potato Medley

Reviewed: Dec. 28, 2009
This was delicious, but based on other reviews, I added to it. First, I used both mozzarella and cheddar cheeses, and used a little more than the recipe called for. After it cooked for about 30 minutes I added some eggs scrambled with basil on top. Then, I added a can of refrigerated biscuits and put the whole thing back in the oven for 18 minutes. It was sooooo good and I will definitely make it again!

Ham and Broccoli Bake

Reviewed: Dec. 28, 2009
This is actually about a 4.5 star...very close to six! I just felt like it needed more sauce. Next time, I will up the alfredo sauce to two jars, and I think it will be perfect. I also added a little bacon and used two cups of cheese instead of one. It was very good!

Dirt Cake I

This was very good. I left out the powdered sugar and it was still delicious! Based on other reviews, I also beat the milk and pudding for a while before adding in the whipped topping.

Decadent Peanut Butter Pie

Reviewed: Dec. 28, 2009
This was delicious! I made it for a Christmas dinner desert for a large family, and it was gone quickly. One person remarked that it tasted just like a peanut butter meltaway. It was also very easy to make.

Cheeseburger Soup I

Reviewed: Dec. 23, 2009
This was delicious! It really did taste like a cheeseburger. I omitted the carrots and celery. I also added an additional three cups of chicken broth, and it was still thick and rich. I will be making this again!

Pecan Chicken Pockets

Reviewed: Dec. 7, 2009
These were VERY good, and my boyfriend loved them, too. I doubled the recipe so that we would have leftovers, and used a little more chicken than the recipe called for. Also, since the cream cheese came in 8 oz. tubs (and I needed 6 when doubling the recipe), I just dumped the whole tub in. Unfortnuately, I didn't have pecans, but I just rolled them in the breadcrumbs and they were still quite tasty!

Restaurant-Quality Baked Potato Soup

Reviewed: Dec. 7, 2009
This was very good. I didn't have quite enough chicken stock, so I added a little extra water and a little extra half and half. Instread of garnishing with cheese, bacon, and green onions, I just mixed it all in. Otherwise, I made it exactly as directed and it was delicious!

Chocolate Cookie Cheesecake

This was so good! I made it for a Thanksgiving dessert, and one of the guests told another that it was "like something you would get in a gourmet restaurant." It was very sweet and rich...absolutely delicious!

Omelet Biscuit Cups

This was delicious and so simple! I changed the ingredients (used egg substitute, skim milk, 2% cheddar and mozarella cheeses, bacon, ham, and some basil, salt, and pepper). The concept, however, is wonderful and coud be used for any type of filling.

Terry's Favorite Easy Chicken Pie

Reviewed: Nov. 8, 2009
This was so good! I added just a few chopped onions and two potatoes that I had peeled, cubed, and boiled. I also used a lower fat cream of chicken soup and low fat cream cheese. It was very easy to make, and perfect food for a chilly day!

Peanut Butter Tandycakes

Reviewed: Oct. 26, 2009
This was very good, and very easy to make. It really did taste like a Tastycake! I do not have a jelly roll pan, but I made it on a stonewar "bar" pan which is about the size of a cookie sheet. Because it is stoneware, it took about 5 -10 minutes longer to cook than the recipe directed, but still turned out very well. I will definitely be making this again.

Chocolate Lemon Cream Bars

Reviewed: Oct. 18, 2009
This was delicious, and easy to make! Unfortunately, I didn't have lemon peel, and although I added an extra two tablespoons of lemon juice, it was not quite as lemony as I would have liked...it had just a very mild lemon flavor. I will use the peel next time. However, it was still delicious, and my boyfriend loved it. It was simple and tasty and I definitely be making it again.

Texas Sheet Cake

This was very good, and VERY easy to make. I was very tired and looking for something that wouldn't take a lot of work...it sounded complicated, but in reality was done in no time at all. VERY simple. And, since I had no eggs on hand, it was the perfect recipe. Very tasty!

Too Much Chocolate Cake

Reviewed: Sep. 28, 2009
This was a delicious and simple recipe. I used regular chocolate cake mix instead of devil's food. I also used a sugar-free pudding mix and light sour cream (because it's what I had on hand). Otherwise, I prepared it exactly as written. Wonderful recipe!

Buttery Soft Pretzels

Reviewed: Sep. 28, 2009
These were very good and very simple! I followed the recipe exactly as written. I made them on stoneware pans, so they actually took longer to cook than the recipe states...maybe about 12-18 minutes in all. And for those counting weight watchers points...by my calculations they seem to be about 5 points a piece...not bad for such a good snack!

Corn Bread Pork Casserole

Reviewed: Sep. 21, 2009
This was a very good recipe, with a very good taste! I think I might like it even better with chicken instead of pork. I made 4x the recipe, so I have a few suggestions for those that are making more servings: 1) Cut up the pork into pieces. I used tenderloin chops, and it was difficult to serve as they were whole. It would have been far easier for both serving and eating if the pork was diced first. 2) Cook for longer than the 25 minutes (plus 10) suggested by the recipe. It will be hard to see the pork as it sort of sinks into the sauce, so it's hard to tell if it's done. However, after beginning to eat, we discovered that it wasn't. I think that one hour (plus the 10 minutes with the stuffing) would be appropriate. The recipe doesn't specify whether the stuffing should be cooked or not before adding it. I used a bag mix of cornbread stuffing, and I did prepare it before putting it onto the casserole. The flavor of the stuffing and the sauce, combined with the meat and mushrooms, is truly delicious!

Grilled Peanut Butter and Jelly Sandwich

Reviewed: Sep. 14, 2009
This was ok, and tasted like a mountain pie. However, it was nothing spectacular, and I like the regular version just as well, so I probably wouldn't go through the hassle of grilling it. However, I do like grilled meat and cheese sandwiches (like turkey and cheese) because the grilling does seem to add something different to the flavor.
