Lucy's Tomato and Peach Chutney
This is just what I was looking for to brighten up simple dinners and sandwiches. Great way to use the bountiful harvest. One reviewer mentioned letting it 'ripen' for 2-3 mos. Could this also be canned? i'm thinking it would be a great hostess gift for the holidays. Or is it not necessary to can because of the vinegar??

Zucchini Cornbread Casserole
This is wonderful. I followed other suggestions and salted and squeezed the zucchini, added red pepper, didn't put cheese on the top at all, but did cover with foil for the first half hour. Also, I baked this in a muffin tin so I could freeze easily - we'll see how that turns out. But they are delicious. Moist, nicely peppered, red pepper gives it good color. I used Trader Joe's cornbread mix - 1/2 of it.

Chocolate Butter Cream Frosting
great deep chocolate flavor. i just melted the chips and added 1 yolk, also didn't add any sugar as we like the flavor the chips without it. it's a little fluid but thickening up as it cools so may or may not need to add a pinch of sugar.
