Without going into all of the details, let me just say that last week was one heck of an emotional roller coaster ride and a week I hope to never see a repeat of. I’ll skip the first part of the week and fast forward to Thursday. Thursdays have potential to be late nights for me at work and… MORE

About this Cook
Hello, my name is Nicole. I am 41 years old and have been married to my high school sweetheart for 17 years now. I haven't always enjoyed cooking but Allrecipes has changed that for me over the years. I now consider myself a foodie and am always up for a good challenge in the kitchen. There isn't anything I won't try at least once. Summer is my favorite time of the year and when I am not recipe hunting, menu planning, etc. I spend my time fishing gardening, and babysitting my chickens.
My favorite things to cook
Soups, Mexican, Italian, Asian, and grilling
My favorite family cooking traditions
I don't really have any so I have started my own. Allrecipes has taught me to "think outside the box". I love trying new and unusual things that I would have never dared or even thought of before discovering this place.
My cooking triumphs
When I got married, I honestly had 0% experience in the kitchen. My mom was the kind that wanted the whole kitchen to herself so that nobody was in her way and I was only allowed in there to grab the plates, utensils, etc. to set the table. I really never thought about what I was going to cook until we got back from our honeymoon and then I was like, "uh oh!". Amazingly enough it all came pretty natural and I am happy to say that I have never ruined a meal forcing us to order take-out.
My cooking tragedies
Me and double battering things do not get along!

Mexican Chili Soup
Made as written and this turned out perfectly. The beef was SUPER tender. You really do need to top it with all of your favorite toppings though in my opinion. I topped mine with avocado, cheese, sour cream, tomato, lime wedge, and baked tortilla strips.

Red, White and Blue Potato Salad
Presentation was great for the first few minutes but even that suffered over time. The purple potatoes turn everything purple/blue within minutes. 3 TBSP. of mayo was not even close to coating the potatoes and 2 bunches of radishes. That's okay though because the mayo didn't really yield enough flavor. This would have been far better with some type of vinegar dressing. Zesty Italian would have perfect I think. You'd still have the problem of the potatoes turning everything purple but the flavor would have been there at least. I also think one bunch of radishes would have been plenty. I made as written but would not make again as so. This recipe was fun due to the colors but it needs some tweaks. If you make as written, I highly recommend adding some fresh herbs.

Fire and Ice Smoked Salmon
Made as written except that I used a smoker instead of a grill. 5 stars all the way! I don't typically care for mint but it was outstanding in this recipe. The finished result is like something you would get in a fancy restaurant (both in look and taste). I will most definitely make this again. Thanks for sharing!
