It's cold and wet out. I'm home alone and didn't want to work hard for dinner, but still wanted something good - this was it! It was perfect, delicious and easy. If I don't end up eating all the leftovers myself for lunch tomorrow my family can have it for dinner.

Taco Pie

I used a 9x13 pan - to much rolls for my square pan - but it fit perfect in my 9x13. I also hate soggy chips - so I crushed doretos and offered them as a topping choice along with shredded lettuce - think domino's taco pizza - that way the chips stayed crunchy even on the leftovers! I also added one can chopped tomato's with mild chilies to the meat mix to give it more substance to fill up my 9x13 pan. Very good and I will make again.

Mexican Lasagna

I made this late in the afternoon and left in teh warm oven so it would be ready to just reheat when I got home at 5pm for dinner. When I got home my DH had already helped himself - to half of it - and it makes a lot!!! No leftovers for lunch for me tomorrow. I did as a few other reviewers sugested and added refried beans and sour cream. Very good and easy recipe!!

Dijon-Tarragon Cream Chicken

This was sooooo good! Melt in your mouth moist. We didn't have fresh tarragon at the store so I went with the dry seasoning. Still great!

Absolute Best Liver and Onions

I really liked this. It really does mellow out the liver flavor. DH said it didn't have enough liver flavor for him - but it didn't keep him from going back for leftovers the next day - leftovers that I was saving to take to my parents - who I also cook for. Now I need to come up with something else for mom and dad tonight!

Best Tuna Melt (New Jersey Diner Style)

This was great for a quick meal when my child brought an unexpected guest home with her for lunch. I had to make it a little more kid friendly - no onion and no tomatoes. Didn't have red wine vinegar so replaced with cider vineger - an no rie bread so used my homeade honey wheat - recipe from AR. They ate it up and there were no leftovers!

Mexican Baked Fish

This was really good. I'm not a big sour cream or avocodo eater so I tried the fish both with it and with out it and I got to tell you the sour cream and avocado just made this dish, Very very good!

Orange Glazed Carrots

When I first started added the OJ I thought I just ruined my carrots. I really dislike the smell of cooking OJ - but once the butter went it it started smelling better to me and the flavor was fantastic!

Dad's Hamburger Gravy

My ozark mountain grandmother used to make this for us as kids. This recipe was awesome - it took me back to my grandmothers hillbilly home. I used grands biscuits topped with mashed potatoes and smothered in this gravy. mmmmm good!!
