About this Cook
After suffering from an illness that starved my body food became a focus. As I have started to get better the old stand by - food from a box - no longer appealed to me. I took the kitchen back from my husband and went back to cooking "real" meals.

My favorite family cooking traditions
My grandmother was a true hillbilly in every sence of the word. Her old recipie book is filled with tipical hillbilly cusine. With my favorite being the raccoon and my least being pickled carp. She was in her 60's when she sent me a photo of herself with her shot gun posing next the the 9 point buck she had brought down. Summers were filled with weeks spent in the Ozarks and interesting meals. Now that she is gone it's family reunions and pot luck dinners where some of grandma's more tame recipies live on.

Six Can Chicken Tortilla Soup
It's cold and wet out. I'm home alone and didn't want to work hard for dinner, but still wanted something good - this was it! It was perfect, delicious and easy. If I don't end up eating all the leftovers myself for lunch tomorrow my family can have it for dinner.

Taco Pie
I used a 9x13 pan - to much rolls for my square pan - but it fit perfect in my 9x13. I also hate soggy chips - so I crushed doretos and offered them as a topping choice along with shredded lettuce - think domino's taco pizza - that way the chips stayed crunchy even on the leftovers! I also added one can chopped tomato's with mild chilies to the meat mix to give it more substance to fill up my 9x13 pan. Very good and I will make again.

Mexican Lasagna
I made this late in the afternoon and left in teh warm oven so it would be ready to just reheat when I got home at 5pm for dinner. When I got home my DH had already helped himself - to half of it - and it makes a lot!!! No leftovers for lunch for me tomorrow. I did as a few other reviewers sugested and added refried beans and sour cream. Very good and easy recipe!!
