Sloppy Sams
Thank you so much for this recipe! I am coming up on my one year vegetarian anniversary and have been getting bored with some other recipes. I thought I was craving meat, but after trying this, I realized I just needed something better! I prepared as directed just increasing the amounts of garlic and onion a little. I would challenge any meat eater to not have seconds.

Ricotta and Tomato Sandwich
I just made this as a late night snack. It was very tasty and very simple. Instead of provolone, I used cheddar since that was all I had. The only thing I would do differently next time would be to sneak in some fresh basil between the tomato and ricotta. Can't wait to try again.

Cheesy Vegetable Lasagna
This dish is true to its name. Very cheesy and lots of veggies. It was so satisfying that my husband did not miss the meat. I couldn't fit all the veggies I cooked in the pan, so I will have to cut back next time.
