Winter Energy Cookies

The family liked these. I think the molasses added a different cookie taste. I made the smaller size, 1/8 cup of dough each, which made 47 total. Watch carefully, hard to tell if they burn because of the dark color.

Ham and Pineapple Dinner

Easy, quick and delicious! Added green peppers but omitted the onions. Had to only use 3/4 cup pineapple juice, that's all that was in the can. Only wish I had rice to serve it over.

Butternut Squash with Onions and Pecans

I liked this bkz it was a good sidedish without being overly sweet. (Most butternut squash recipes are sweetened with sugar or cream.)However, mixed reviews from the family, kids liked it, DH thought it was dry.

Porcupines

Very good. Only had 1 8 oz tomato sauce so I used spaghetti sauce for the other half. I did parboil so thank goodness the rice wasn't crunchy. I had no celery salt. I did not brown the meat first. Just added basil, oregano, italian seasoning, garlic, onion and egg with the ground beef. Added the same spices with the sauce. This way the porcupines and the sauce both tasted good. Made about 12 meatballs, we loved it.

Emma's Clam Chowder

I cut the recipe to 3 servings. I didn't use bacon or salt, too much sodium. I did add a vegetable buillon cube to the water. Used black pepper instead of white. I had to add a lot of water to serve three people. Also added some cornstarch to thicken it up so it would be more of a chowder instead of a soup. Yes, I'd make it again with the necessary changes.

Spinach Salad with Red Potatoes

I cut the salad recipe in half. I used Baco-bits instead of real bacon, and yellow onion instead of red. Prep time was 20 minutes. Speed it up by microwaving the potatoes. I didn't make the dressing. The salad was the side to AR's Clam Chowder recipe.

Eggplant Appetizer

Liked, not loved it. Served with crackers but didn't receive any positive comments. If I'm going through all those steps for an appetizer I prefer 5 stars! My DH thought it was a salsa, I like the red wine vinegar taste. If you're not sure, make a small batch first.

Easy Slow Cooker Meatballs

These meatballs were bland. On the positive side: easy to make, kept their shape (I used a ground beef/pork meatloaf mix). I used 1/2 parm cheese as suggested instead of all bread crumbs and dried parsley. But since they didn't taste fabulous, I'll try another recipe but continue to use it in the crockpot!

Cream of Tomato Soup

My soup was not creamy, more like tomato juice with onions. Can't figure out if the mistake was using fresh tomatoes pureed or how I cooked it on the stove. Maybe I'll attempt it again, maybe not.

Easy Batter Fruit Cobbler

It's easy, delicious and versatile - works for me! I used 3 cups of raspberries, less would have made it more cake-y. Thought the batter was good, I reduced the butter by a little and mixed wheat flour in with the white. I served it in a 9.5 inch pie plate instead of a square baking pan.

Slow Cooker Sweet and Tangy Chicken

Simple, delicious and versatile. We used thigh meat and after 7 hrs of slow cooking it comes right off the bone. Put in any veggies you want! With the pineapple and peppers I included snap peas and carrots. Serve it with a plain rice, like brown or jasmine; otherwise the fried rice flavors compete with the tangy chicken.

Asian Ginger Dressing

Orange Cream Cookie Mix

Good ONLY with the changes reviewers suggested. Reduce Tang to 1/3 cup, add 1/4 tsp salt, use 2 eggs and include another 3 Tblsp. flour. Baked at 350 for 10 minutes and they came out soft and chewy. Think they would awful tangy-sweet if recipe was kept as originally shown. Just being honest! Thank you for fixing it with the past suggestions, so I wasn't disappointed!

Pork Tenderloin with Pineapple Salsa

Family thought this was ok but not a 'keeper'.Didn't feel the glaze stayed with the pork after baking. Salsa was good, (I've made a similar one for grilled tilapia.)

Strawberry Bread

Good, not great. I added more strawberries and less cinnamon as suggested, also used 1/2 wheat flour. It wasn't as moist as the Strawnana Bread recipe on this site in comparison.

This was very moist, as opposed to the other strawberry bread recipe on site. Used the suggestions to omit orange zest and added 1/2 tsp vanilla extract. Divided the white sugar with brown. Definitely glad I added another 1/2 cup of strawberries, not too mashed. Delicious!

Tangy Grilled Pork Tenderloin

This is as good as everyone says. The grilling probably added to the flavor, moist too. Served it with sweet potatoes. The yummiest yet easiest dinner I ever made without much work.
