Cranberry Glop

This was good. I chopped up the cranberries briefly in the food processor instead of leaving them whole. It was missing just something, so we sprinkled cinnamon on it to serve. Also we had whipped cream on top. Those two adjustments made it just right.

Crazy Crust Pizza Dough

To prevent sticking I covered my pizza stone with corn flour--no problems at all. I did follow others advice to use only 1 egg, and add extra flour, baking powder and olive oil. Baked 8 minutes, topped and then baked another 15 min. Was easy to make, but not the tastiest dough in the world. It was kind of crumbly instead of a smooth consistency when baked. There wasn't a lot of flavor, even with the addition of lots of spices and garlic.

Country Apple Dumplings

This was incredibly good, and even easier to make. It took me like 5 minutes to prep it and throw it in the oven. Only four stars because it is so unhealthy (but hey, it is dessert...!) and because the crescent dough wasn't quite as flaky and yummy as homemade dough. The only changes I made were to use medium size apples quartered, instead large apples cut into eight pieces, so there was a little more apple to dough ratio. I may add a dash of vanilla next time, but it's probably not needed-was plenty good without!

Gingerbread Waffles

These were good. I doubled the batch, and added about 1/4 of applesauce to sweeten them just a bit. I served them with apple topping (2 apples sliced thinly, about 3 tbsp brown sugar, 1 tbsp maple syrup, 1-2 tsp cinn, cooked over medium heat till boiling, then simmered on on low till apples were just soft). It was good and plenty sweet enough for me. I also tried a few with chocolate chips mixed in. They were AWESOME! Served those ones with hot maple syrup.

Marbled Pumpkin Cheesecake

Worth the effort! I baked mine in a plain ol' 9" pie dish and it came out great. I put the pie dish in a water bath (jelly roll pan with 1-2 inches water) to cook at the said time. I also sub 1/2 the ginger snaps with graham crackers for the crust. Turned out perfect! ***I did have some extra filling, and I made a sweet little cupcake with it. I put a gingersnap in the bottom of a muffin wrapper and poured filling on top. Baked it for a half hour at 350F. It was so cute and tasty--the gingersnap softened into a yummy crust on the bottom. I might make a whole batch like that next time.

Thai Noodles

I left the chile sauce out because I don't like too much spice, and added some Red Hot instead. The result ended up being a little flavorless, and much too peanut-y. I doused the leftovers in soy sauce and they were a little better.

Poor Man's Pepper Steak

We thought this was pretty bland, even using beef broth instead of water and adding an extra garlic clove as well mushrooms and red peppers. The steak had a mushy outside from cooking in the water, and the veggies were way too done.

Vegetable Fried Rice

This was pretty good. We also added 2 eggs. I cooked the rice in veggie stock/water mixture. I used frozen mixed veggies, plus fresh green pepps and oninon. I needed a bit more soy sauce to have enough flavor, but that may be because I left out the red pepper flakes for a dinner guest who cant eat spicy food.

Whole Wheat Sweet Potato Muffins

Theese were quite good-my hubbie loves that they are healthy. I subbed brown sugar for the honey, and cut it back to 1/2 cup (wow, who has a whole cup of honey to use in just one batch of muffins?!) I also subbed applesauce for oil and used fat free yogurt. They needed just a little something more, so next time I may add a little more of the spices.

Sweet Potato Pie with Marshmallow Meringue Topping

I tried only the topping, and put it on a different sweet potato pie recipe. It was delicious--very light and fluffy, and toasted to a gorgeous light brown. It was extremely sweet though, so next time I'll cut back the sugar in the filling of the pie. My husband put this on his top 5 best pies list, even though it was the first sweet tato pie I've ever made!

Sweet Potato Pie VII

Oh my gosh, this was absolutely delicious. I added 1/2tsp nutmeg and 1 tsp cinnamon, but otherwise followed to a T. After baking for 60 min I topped with marshemellow meringue from "Sweet Potato Pie with Marshmallow Meringue Topping" recipe on this site. (This topping was SUPER sweet, so next time I'll cut back the sugar in the pie to 1/2 cup). The result was a heavenly cross of sweet tato pie and sweet tato casserole. My husband put it on his top 5 best pies he's ever eaten!

Sour Cream Peach Kuchen

I made this poor recipe all wrong (shouldn'tve been on the phone while baking!) and put ALL the sugar into the crust, and hardly any in the peaches. It still came out tasty, but I will try the actual way soon!

Fresh Guacamole

Now THAT is a delicious guac! Didn't have some stuff on hand so subbed the roma with 2 large cherry tomatos, used 1/2 tsp chili powder instead of the fresh chili pepper, used about 1/2 tbsp of dried cilantro. Threw it all in the food processor for a minute and was good to go!

Coconut Cream Meringue Pie

yum! This beats the other recipe I was using. I used unsweetened, dried coconut and moistened it in water. I used coconut oil instead of butter. I had no cream of tartar for my meringue, so I heated 1/3 cup cold water plus 1 tbsp cornstarch until just thickened (stir often!), cooled it, and whipped it into the whites after the sugar. No sweating or beading this way and it won't alter the taste as much as cream of tartar. The result was delicious!!!!!

Whole Wheat and Honey Pizza Dough

I used to make a different whole wheat crust that I loved, so I was reluctant to try something new...but wow, am I glad I did! This was SO good. It was not as bread-like as other whole wheat crusts (unless you let it rise for longer than directed). I let mine rise only 15min in the microwave after I nuked a cup of water for a minute to make it warm. I rolled it out onto a pizza stone dusted with corn meal. I pre-baked at 425 for 7min. Afterwards, I brushed the edges with olive oil and sprinkled with parmesian and garlic. Then I topped with sauce, mozzerella, feta, tomatos, pepper rings, red onions. I sprinkled basil and a touch of olive oil over the whole thing and baked at 425 for 15 minutes. [One more thing--I subbed oat bran for the wheat germ.] Perfect, chewy, delicious! Thank you so much; this will be my new recipe from now on!

Lemon Coconut Squares

I am sorry; we didn't care for these at all. Not lemony enough (needs more lemon filling as well as a stronger lemon flavor), a little dry, and the coconut just really took away from it. The crust had a nice texture but was REALLY buttery. I usually love coconut, but I think the texture of it just wasn't right for this dessert.

Beef Stroganoff II

This was delicious! I added a splash of white wine, garlic pwder, extra paprika and a bit of worchestshire to the meat as it cooked. When I added the soup, I used one can of NON-condensed mushroom soup, and added a half can of beef broth. I also added about a tsp and a half of dijon mustard. It was sooo good, even my husband loved it!

Arrowroot Biscuits

Yummy! I made with only 1/3 cup of sugar, but I sprinkled the tops with powdered sugar when they first came out of the oven. It made for a lightly sweet treat. I creamed in only half the butter, then melted the other half and added it. That way the dough was just perfect and needed no extra milk or water to make it moist enough.
