Eggplant Parmesan II
My college-age daughter was home for dinner last night so I decided to finally try this recipe. Neither of us have had eggplant before so I wasn't too sure what to expect. I asked a few friends advice on picking a good eggplant since I've never cooked with it, so I am fairly positive I had a good eggplant. I followed the recipe exactly and when it was done it looked and smelled great. My daughter absolutely loved it! Me on the otherhand didn't like it at all. I am still giving this recipe 5 stars since my daughter enjoyed it so much. I must just not like the taste of eggplant apparently. I will make this again for my husband to try. He has never eaten eggplant either, and I am hoping he has the same opinion as my daughter!

Mexican Rice II
This is the easiest and best mexican rice recipe I've found. I don't like onions so I did leave those out. I made this rice for using in enchiladas that I recently made and my family loved it, plus the leftovers are great too. Tastes just like the rice from our favorite mexican restaurant.

Berry Bread Pudding with Brown Sugar Sauce
I made this for dessert last night and everyone loved it, even my husband who claims he hates any bread pudding. I followed the recipe exactly except the cooking time, I had to add an extra 30 minutes and I didn't have very many blackberries so I added a few blueberries, also I added pecans. I've made several different bread puddings and this is one of my new favorites. The mix of the berries and the brown sugar sauce is great. It tastes even better the next day! Make sure that you use a good french bread and that it's definately stale, trust me it makes a difference. Thanks for a great recipe!
